Description

For anyone searching for high protein dinner ideas, these Blackstone Chicken Fajitas are a flavorful, nutritious win. Cooked on a portable Blackstone griddle, this quick recipe combines lean chicken breast, vibrant bell peppers, and onions for a healthy meal perfect for outdoor cooking enthusiasts. With 28-30g of protein per serving, it’s ideal for camping, tailgating, or a backyard feast—sizzling, smoky, and ready in under 30 minutes!

Ingredients

Scale
  • 1 lb chicken breast, sliced into thin strips
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 tbsp olive oil
  • 1 tbsp fajita seasoning (store-bought or homemade: 1 tsp chili powder, 1 tsp cumin, 1 tsp smoked paprika, ½ tsp garlic powder, ½ tsp onion powder, pinch of salt)
  • 8 small tortillas (flour or corn)
  • Lime wedges for serving
  • Optional toppings: salsa, guacamole, sour cream, shredded cheese

Instructions

  1. Preheat your Blackstone griddle to medium-high heat (375°F–400°F). Drizzle 1 tbsp olive oil and spread it evenly across the surface with a spatula.
  2. Toss the chicken strips with fajita seasoning in a bowl until well-coated. Place the chicken on the griddle and cook for 5-7 minutes, flipping occasionally, until fully cooked (internal temperature reaches 165°F). Remove and set aside.
  3. Add the remaining 1 tbsp olive oil to the griddle. Toss in the sliced red and green bell peppers and onion, cooking for 4-5 minutes until tender and slightly charred.
  4. Return the cooked chicken to the griddle, mixing it with the veggies for 1-2 minutes to combine the flavors.
  5. Place the tortillas on the griddle and warm for 30 seconds per side until slightly crispy.
  6. Assemble the fajitas by loading the tortillas with the chicken and veggie mixture. Squeeze fresh lime juice over the top and add optional toppings if desired. Serve immediately!

Notes

  • Homemade Fajita Seasoning: Mix 1 tsp chili powder, 1 tsp cumin, 1 tsp smoked paprika, ½ tsp garlic powder, ½ tsp onion powder, and a pinch of salt for a custom blend. Store extras in an airtight container.
  • Customization: Add jalapeños for heat, swap chicken for shrimp or steak, or top with pineapple salsa for a twist.
  • Griddle Tip: Keep the surface oiled to prevent sticking and enhance flavor.
