Ingredients

Scale

For the Dough:

  • 1 cup warm milk (110°F / 45°C)
  • 2 ¼ teaspoons active dry yeast (1 packet)
  • 1 teaspoon granulated sugar (for yeast activation)
  • 3 ½ cups all-purpose flour
  • ¼ cup granulated sugar
  • ⅓ cup unsalted butter, melted
  • ½ teaspoon salt

For the Brownie Filling:

  • ¼ cup unsweetened cocoa powder
  • ½ cup brown sugar, packed
  • ¼ cup unsalted butter, melted
  • ½ cup semi-sweet chocolate chips

For the Cinnamon Layer:

  • 1 tablespoon ground cinnamon
  • ⅓ cup granulated sugar
  • 2 tablespoons unsalted butter, softened

For the Cream Cheese Frosting:

  • 4 oz cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 1 ½ cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk (to thin, if needed)

Instructions

  1. Prepare the Dough: In a small bowl, combine warm milk, yeast, and 1 teaspoon sugar. Let sit for 5 minutes until foamy. In a large bowl, mix flour, ¼ cup sugar, melted butter, and salt. Add the yeast mixture and knead for 5-7 minutes until smooth. Cover and let rise in a warm place for 1-2 hours until doubled.
  2. Make the Filling: In a bowl, mix cocoa powder, brown sugar, and melted butter until combined. Set aside. In another bowl, combine cinnamon and sugar.
  3. Assemble the Rolls: Roll out the dough on a floured surface into a 12×18-inch rectangle. Spread the brownie filling evenly, sprinkle with chocolate chips, then spread softened butter and sprinkle the cinnamon-sugar mix. Roll tightly into a log and cut into 12 equal pieces.
  4. Second Rise: Place rolls in a greased 9×13-inch baking dish. Cover and let rise for 30-45 minutes.
  5. Bake: Preheat oven to 350°F (175°C). Bake rolls for 25-30 minutes until golden.
  6. Frost: Beat cream cheese, butter, powdered sugar, vanilla, and milk until smooth. Spread over warm rolls.

Notes

    • For extra gooeyness, don’t overbake—remove when centers are slightly soft.
    • Add a chocolate drizzle for a decadent twist.
    • Store leftovers in an airtight container for up to 2 days or refrigerate for a week.
