Ingredients

Scale
  • For the Chocolate Shell:
    • 200g high-quality dark or milk chocolate
    • 1 teaspoon coconut oil (optional, for a smoother finish)
  • For the Pistachio Filling:
    • 100g pistachio paste (store-bought or homemade)
    • 50g powdered sugar
    • 2 tablespoons heavy cream
    • Pinch of salt
  • For the Kunafa (Kadayif) Layer:
    • 100g kunafa (kadayif) pastry, shredded
    • 2 tablespoons melted butter
    • 1 tablespoon granulated sugar
  • Optional Toppings:
    • Chopped pistachios (for garnish)
    • Dried strawberries (for a fruity twist)
    • 1 scoop pistachio ice cream (optional pairing)

Instructions

  • Prepare the Kunafa Layer:
    • Preheat your oven to 350°F (175°C).
    • In a bowl, toss shredded kunafa pastry with melted butter and sugar until evenly coated.
    • Spread the mixture in a thin layer on a baking sheet.
    • Bake for 10-12 minutes until golden and crispy. Set aside to cool, then break into smaller pieces if needed.
  • Make the Pistachio Filling:
    • In a medium bowl, combine pistachio paste, powdered sugar, heavy cream, and a pinch of salt.
    • Stir until smooth and creamy. Adjust with more cream (1 tsp at a time) if too thick. Set aside.
  • Melt and Temper the Chocolate:
    • Break chocolate into pieces and place in a heatproof bowl with coconut oil (if using).
    • Melt over a double boiler or in the microwave (20-second intervals, stirring between) until smooth.
    • Cool slightly to 88°F (31°C) for dark chocolate or 86°F (30°C) for milk chocolate to temper.
  • Assemble the Dubai Chocolate Bar:
    • Line a rectangular mold or small loaf pan with parchment paper.
    • Pour a thin layer of melted chocolate into the mold to form the base. Refrigerate for 10 minutes to set.
    • Spread pistachio filling over the set chocolate, leaving a small border.
    • Add crispy kunafa pieces, pressing gently.
    • Pour remaining chocolate over the top, tapping to remove air bubbles. Refrigerate for 2 hours until fully set.
  • Slice and Serve:
    • Remove from the mold, peel off parchment, and slice with a warm knife.
    • Garnish with chopped pistachios, dried strawberries, or serve with pistachio ice cream.
